Fishy in a dishy

Now that we are in full swing of the holidays, I find I have more time to try out all the recipes I have been collecting and longing to make. Not only baking lovely cakes for the kids to devour seconds after they are cooled and iced but also meal ideas and homemade jams, chutney etc.

Coming over the next few months I will be sharing with you dear reader, an idea I have been wanting to try out for a long time but never actually got myself into gear and actually done it. I want to eat seasonally.

 

Now I know we won’t be eating entirely seasonal, firstly I work and am studying so come October when I go back to university, I know that this won’t be feasible, but at least one meal a week, maybe more I want to be incorporating the seasonal ingredients available at that time.

One of the recipes I have been wanting to try for a while is this Mackerel Pate. My children love Mackerel, but I always worry about them choking on bones when they are eating it. Rather than not let them eat Mackerel, I found a way for them to eat it without the worry of having to call the ambulance (neurotic mother, I know) every time.

Mackerel Pate

 

Ingredients

  • 500 g Smoked Mackerel Fillets
  • 2 x 200 g tubs Full Fat Soft Cheese
  • 1 Lemon, juice
  • 1 tsp Cayenne Pepper
  • 4 tbsp Greek Yogurt
  • 2 tsp of  Creamed Horseradish
  • Parsley, to garnish

Method

  1. Skin the mackerel and place into a food processor, along with all the other ingredients and whizz together.
  2. Place into a bowl and garnish with parsley. Serve with toast or crackers.

See I said it was simple and it makes a very tasty quick, no fuss lunch and is great to take along on a picnic!
