What is with this weather? I know the kids have broken up and I expect a bit of rain but its cold too. It feels more like Autumn than Summer, I just hope the few weeks of sunshine we have had aren’t the only ones we’re going to get.
With the weather behaving badly, comfort food is on the menu. My three can be picky eaters, more so at the moment, so finding anything they will all eat is proving difficult to say the least.
There is one thing everyone will eat, sausages. If all else fails, I know I can pull together a meal that will result in clean plates as long as these are part of it. With this in mind, I wanted to share with you one of our favorite comfort foods, Toad in the Hole.
So quick and easy to make, filling and wholesome, Toad in the Hole is a family favorite and has been for many generations in my family too.
- 8 good quality pork sausages
- vegetable oil
- 100 g Flour
- 1 egg
- 300 ml milk
Heat the oven to 190 degrees, placing a large oven proof dish with some oil in. Leave this to heat whilst you mix the batter.
Add the flour to the bowl and make a well in the middle. Add the egg and mix with a wooden spoon. Gradually add the milk to the mixture, continually stirring until all lumps have been mixed in.
Add a splash of oil into a frying pan to brown the sausages.
Add the sausages to the oven proof dish and pour over the batter.
Cook for 40 minutes.
Serve the toad in the hole with mashed potatoes, seasonal vegetables and gravy.
